1 pompano, whole

1/2 cup cornstarch

2 tablespoons oil

2 cloves garlic, minced

1 medium onion, chopped

1 1-inch knob ginger, minced

1 medium onion, chopped

1 can pineapple chunks

1 medium red bell pepper, sliced

1 cup sweet chili sauce

1 tablespoon sesame oil

1 tablespoon sugar 2 tablespoons soy sauce salt, to season   


Cooking Instructions:

Dredge the pompano in cornstarch. Heat oil in a medium-sized frying pan and pan-fry each pompano. Set aside.

In another medium-sized pot, saute garlic, onion and ginger. Add the pineapple chunks, red bell pepper and carrots. Add in the sweet chili sauce, sesame oil, sugar and soy sauce. Let it simmer for 15 minutes. Season with salt and pepper. Serve sauce over the fried pompano.
